We are addicted to this two ingredients peanut butter and banana ice cream. It began with an idea to make something frosty for our dogs, but it’s so delicious and healthy that we’ve started to make it weekly for everyone in the family as a special treat!
4 frozen and peeled bananas
(should be frozen over night for best results).
3 Tbsp peanut butter
Peel your bananas and chop each one into about five pieces. Freeze overnight.
You need either a very high powered blender or a food processor. Don’t try this in a regular blender, you need a workhorse of a machine to turn the frozen bananas into cream.
Place frozen banana pieces into the machine. Pulse until they are in very small bits.
Now, remove lid and use a spatula to get the mixture loosened up from the sides. Add three tablespoons of peanut butter (you may want to use all natural). Blend it all together until it comes together and looks like ice cream. Don’t get discouraged — there will be a time when you’re wondering if it’s actually working or not — fear not, it takes a few minutes. When just made, this is like soft serve, but letting it harden in the freezer for a bit turns it into a harder ice cream.
*Tip: Adding a hint of cinnamon adds a nice layer to this ice cream.
Here’s to a safe and happy summer!
