Coconut Oatmeal Cookies

Oatmeal cookies get a delicious, summer twist.


  • ½ cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup butter
  • 2 cups all-purpose flour
  • 1 cup flaked coconut
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups rolled oats


  • In a medium mixing bowl, combine shortening with butter and both sugars. Add eggs and vanilla, and set aside. Preheat oven to 350 degrees.
  • In a separate bowl, combine flour with baking powder, baking soda, and rolled oats. Once they’re all blended, add in the coconut.
  • Combine wet and dry ingredients and form cookies on a greased cookie sheet. Bake for 8–10 minutes.
