Grill sliced sausage and set aside. Toast baguette slices on grill until golden; remove to a
serving platter. For zucchini relish, heat a frying pan over medium heat. Add oil, zucchini,
red pepper and onion; fry until soft, about 5 minutes. Stir in red wine vinegar; remove from
heat and stir in fresh herbs. Top each baguette slice with some grainy mustard and a grilled
sausage slice; top with zucchini relish and garnish with watercress, if desired.
