Sausage Sliders

  • 1 tsp. olive oil
  • 1 zucchini finely diced
  • ½ red pepper finely diced
  • ¼ red onion finely diced
  • 3 Tbs. red wine vinegar
  • 2 Tbs. chopped fresh herbs parsley, thyme, basil
  • Watercress for garnish optional


  • Grill sliced sausage and set aside. Toast baguette slices on grill until golden; remove to a
  • serving platter. For zucchini relish, heat a frying pan over medium heat. Add oil, zucchini,
  • red pepper and onion; fry until soft, about 5 minutes. Stir in red wine vinegar; remove from
  • heat and stir in fresh herbs. Top each baguette slice with some grainy mustard and a grilled
  • sausage slice; top with zucchini relish and garnish with watercress, if desired.
