Pulled Pork

  • 1.7 Kg Ontario Pork Shoulder
  • 1 Tbsp Garlic Powder 15 ml
  • 1/2 Tbsp Onion Powder 7.5 ml
  • 1 Tsp Chili Powder 5 ml
  • 1 Tsp Cayenne Pepper 5 ml
  • 2 Tsp Paprika 10 ml
  • 1 Tsp Salt 5 ml
  • 2 Tbsp Olive Oil 30 ml
  • 1 Cup Broth of your choice 250 ml

Bean Salad

  • 1 Cup Black Beans 225 ml
  • 1 Cup White Beans 225 ml
  • 1 Cup Corn 225 ml
  • 1 Cup Red Onion , Diced 225 ml
  • 3 Cloves Garlic Minced
  • 2 Tbsp Olive Oil 30 ml
  • The Juice of 1 Lemon

Instructions

Pulled Pork

  • To start, season pork shoulder with garlic powder, onion powder, chili powder, cayenne powder, paprika, and salt.
  • Set your Instant Pot to sauté mode, add olive oil and sear the sides of your pork shoulder.
  • Add 1 cup of broth/stock to the Instant Pot. Set your Instant Pot to sealing and set the manual pressure for 70 minutes. Let Instant Pot release pressure naturally (slowly) for 10 minutes when done.

Bean Salad

  • In a large bowl, combine all ingredients for bean salad. Set in the fridge to chill.
  • Once the pork is done, remove it from the pot, shred, and serve with bean salad, rice and sour cream or yogurt if desired.

Alternative Cooking Method

  • If using a slow cooker, sear pork shoulder on the stove top first. Add the liquid and pork shoulder to the slow cooker. Cook on low 8 to 10 hours (or on high 5 to 6 hours).
